Choripan, Chorizo Sandwich

Choripan is a classic sandwich popular throughout most of Latin America. The name choripan comes from the sandwich’s two main ingredients, chorizo (spanish sausage) and pan ( bread in spanish). Other ingredients can be added like onions, garlic, pickles to the choripan as desired. The recipe below makes 4 Servings

Ingredients Needed
– 1 Small white onion, sliced fine
Spanish Olive Oil for cooking
– Four 8 inch long pieces of Cuban bread or French Baguette
– 8 Smoked Spanish Chorizo sausage, cut into ¼ inch thick slices
– 2 Dill pickles, sliced lengthwise
– 4 tablespoons yellow deli mustard
– 6 ounces of butter

Directions
Fry the onion in the oil until translucent. Slice the bread lengthwise. Separate the fried onions, chorizo, and pickles into four equal portions. Prepare the sandwiches by placing the chorizo on top of one half of the bread and top with onions. Put the sliced pickles on top. Spread the inside of the other slice of bread with mustard and close the sandwich. Smear the top and bottom of the outside of the sandwich with butter and cook in a very hot cast iron skillet or electric griddle, until heated through and golden brown on the outside.
