What Is a Sandwich de Miga?

A sandwich de miga is a double-decker, no-crust sandwich that’s famous in Argentina and the neighboring countries of Paraguay and Chile. It comes with cold-cut meats (such as ham, salami, etc.), tomatoes, cheese, hard-boiled eggs, lettuce, and peppers. It can either be toasted or untoasted.

There are various theories about the origin of these scrumptious crustless sandwiches.

Some people claim that Italian immigrants brought it to Argentina, while another theory claims that the sandwich was created by local bakers working in the Confitería Ideal, a cafe in Buenos Aires around the 1900s

Regardless of this sandwich’s origins, it’s a cult classic and never disappoints, especially when you want snack on something or need to grab and go.

Follow the recipe below to make the easiest yet most delicious sandwiches de miga.

While you can add your preferred fillings of various meats and vegetables to your sandwich de miga, this one has amazing flavor and is my favorite recipe:

Ingredients

  • White bread slices
  • 200 g (7 oz) softened butter
  • 10 ml (2 tsp) sunflower oil
  • 50 ml (¼ cup) water
  • 2 medium tomatoes, thinly sliced
  • Olives, sliced
  • Arugula leaves
  • Roquefort cheese
  • Ham slices
  • 5 medium eggs, hard boiled and chopped
  • Cheese slices

Directions

  1. Beat the butter while slowly adding in the oil. Do the same with the water to emulsify the mixture and give it a light texture. Season it with salt and pepper.
  2. Halve the sliced bread to form even thinner slices and cut their crusts off. Cover them with a damp kitchen towel as they dry out quickly.
  3. To assemble the crustless sandwiches, lay down a slice of bread and spread the butter mixture over it.
  4. Add ham, cheese, or both. Place another sliced thinly piece of bread on top and apply the butter mixture again.
  5. Add the toppings of your choice to this slice of bread. Feel free to get creative with the combinations in this step.
  6. Take another piece of bread and apply the butter mixture.
  7. Place the bread, buttered side down, onto the rest of the sandwich.
  8. After this, you can toast your sandwiches or leave them as they are.
  9. If you decide not to toast them, cover them with a damp kitchen towel until you eat them

Argentina's Sandwiches de Miga
Argentina’s Sandwiches de Miga

Sandwich de miga is simple and delicious. An ideal option to serve as an appetizer or canapé.

It deserves more recognition, especially since it allows everyone to adjust it to taste.

You can even go crazy and try unusual flavor combinations.

However, there are 3 Golden Rules when it comes to serving a sandwich de miga;

  1. The bread must be sliced thinly. Similar to pullman bread.
  2. No crust! A true sandwich de miga is crustless.
  3. It must be served with at least two layers. A single layer disqualifies it as an authentic sandwich de miga. It must have at least three pieces of bread.

Whether you stick to traditional fillings or become more adventurous, sandwiches de miga deserve a try and will be hit at family gatherings.
