Chile Relleno Recipe

Chile Relleno are pretty simple and easy to make.
You can prepare and cook this dish in less than an hour.
Serve it immediately after cooking so you can enjoy the melted cheese and the crunchy goodness of the peppers.
Ingredients:
- 6 large poblano peppers
- Cheese, 8 ounces (226 g), shredded
- 3 eggs
- All-purpose flour, ½ cup
- Table salt, ½ teaspoon
- Cooking oil, 4 cups
- Sour cream, a dollop or so
Directions:
- Roast the poblano peppers on the stove or in the oven until the skins turn black. Remove the charred skin.
- Grab a knife and cut a small slit down the center of each Poblano pepper. Close back the peppers by piercing the edges with toothpicks (so that the filling won’t escape while frying). Set them aside.
- Separate the egg yolks from the egg whites. Place the egg whites in a large bowl and the egg yolks in a smaller bowl.
- Beat the egg whites until they’re fluffy. They’re fluffy enough once you see little peaks forming on the surface. Slowly add in the egg yolk, 1 yolk at a time, while gently beating the mixture until the batter is fluffy and golden yellow.
- Heat oil in a frying pan. Line a serving dish with paper towels.
- Combine the salt and all-purpose flour in a shallow bowl. Form an assembly line: the stuffed Poblano peppers on your left, the all-purpose flour mixture in the middle, and the egg batter on your right.
- Roll 1 stuffed Poblano pepper in the flour. Make sure it’s completely coated. Dip the flour-coated stuffed Poblano pepper in the egg batter, ensuring it is completely coated.
- Place the coated Poblano pepper in the frying pan. Make sure to fry both sides until golden brown. Transfer the cooked Poblano peppers to the serving plate lined with paper towels to drain away excess oil.
- Top each Poblano pepper with some sour cream. Serve and enjoy!
You may use any kind of cheese that you prefer, but traditional Chiles Rellenos are made with Oaxaca cheese if you want the real deal.
