A Guide to Mexican Seafood
Mexico has two long coastlines, and its seafood cooking is sharper and spicier than most people expect. Aguachile from Sinaloa is the clearest example: raw shrimp cured in lime with chile, cucumber and onion, eaten within minutes of being made. Up the Pacific coast in Nayarit, pescado zarandeado is a whole fish butterflied, brushed with chile and grilled over coals, and Baja fish tacos wrap battered fish in tortillas with cabbage and crema. Shrimp gets the two classic treatments: camarones a la diabla, simmered in a fiery guajillo sauce, and cóctel de camarones, served chilled in a tomato-lime broth with avocado.
