A Guide to Colombian Sides & Breads
Colombia's sides are corn and plantain first. Arepas come with every meal, pandebono and almojábanas are the cheese breads from the bakery, and plantain shows up as patacones (green, smashed and fried) or tajadas (ripe and sweet). Aborrajados stuff ripe plantain with cheese and batter-fry it, chicharrón is the pork belly on a bandeja paisa, and hogao is the sauce that goes over all of it.
